This dish is very popular in the Eastern part of India. The ingredients like coriander seeds, ginger, red onions, garlic, cumin and many more different spices are ground together and sautéed on low heat. Then the tomatoes are added and sautéed until juice and
Pulp is released and then the fresh vegetables like carrots, eggplants, red creamer, blue lake beans, bell peppers, cauliflower and many other are added and cooked.

(3) KAJU KI MURGI

(Boneless chicken cooked in cashew paste, coconut, saffron, and tomato curry)
This dish comes from the Southeastern Indian community. This dish is prepared by first grinding the spices with fresh coconut milk, cashew, fennel seeds, cumin’s, green chilies, red onions, ginger, garlic, roasted saffron, fresh mint, mustard and coriander seeds. The chicken cubes are kept marinated in this spices paste for a long time. The vine-ripened tomatoes are sautéed separately with turmeric powder. The marinated chicken is added to the tomatoes and cooked till the oil separates.

The word Dopiaza means’ two onions’. Pork cubes are soaked in a mixture of salt, vinegar, water and many different spices. The gravy is prepared with ginger, garlic, red onions, tomato, red bell pepper and many more spices. After the gravy is ready the pieces of raw mango and pork are sautéed in it until well tempered.
